Chef: Shing Tat Chung, Erchen Chang and Wai Ting
Why go: the stall at Netil Market in Hackney, London is finally getting a permanent home. Expect soft steamed buns (which is what a "bao" is) made with milk and filled with soy-braised pork. Mmm

Cuisine: burgers (that’s a cuisine, right?)
Why go: the City burger van has found a permanent home (yay). Forget fancy sauces, this place is the master of simplicity: straight-talking burgers with a knockout bun that you won't want to let go of
