Oh yes please! This fabulous-sounding recipe is sometimes called an "Idaho sunrise". No-one seems to know why but they do know it's delicious and perfect for leftover baked potatoes. Scoop a bit out, layer with cheese, bacon, throw an egg in there and bake to crispy, golden goodness.
