Once you've tasted this delicious homemade cashew butter, there's no turning back
So you've probably been hearing a lot of hype about the old Nutribullet lately. Green juice this, kale that. It all sounds a bit, well, healthy doesn't it? The good news is that you can make some awesome not-so-green stuff in there, too.
If you've ever clapped eyes on a Nutribullet, you'll have seen the 'milling blade' part. This is for dry hard things like nuts that can be turned into delicious butters. This week's contender is the butter of the moment: cashew. With a vanilla twist and a sweet maple base, this will become your new addiction. Don't say you weren't warned.
Makes 1 small jar of cashew butter
You will need:
- 200g of any cashews. We prefer salted and roasted for a slightly more savoury taste, but plain are also delicious
- A Nutribullet or any other gadget able to cope with nuts. It's got to be a strong one
- 1 tsp vanilla essence
- 3 or 4 tbsp maple syrup or honey, to taste
- 4 tbsp rapeseed or coconut oil
Chuck your nuts into the Nutribullet and mill them until they are all ground.
Chuck in your other ingredients and whizz again. Change the attachment from mill to blend if not enough mixing is happening. The mixture will be a bit claggy so you might have to take off the blender and mix with a spoon until everything is bound together.
Find the nearest carbohydrate vessel – a cracker, some bread, your finger – and spread immediately. Peanut butter ain't got nothing on this stuff.
