A delicious rum-based cocktail concocted by Mixologist Richard Woods

For any home bar, rum, dry sherry, maraschino and vermouth are amongst the bottles everyone should have. The sparkling wine adds a light freshness to this drink whilst the balsamic adds a tart contrast to the sweetness of the liqueur.



  1. 35ml Light Rum 
  2. 20ml Martini Bianco
  3. 20ml Tio Pepe
  4. 2 Tea Spoon Maraschino liqueur
  5. 1 Tea Spoon sugar syrup (1:1 caster Sugar:Water)
  6. 0.5 Tea Spoon Balsamic vinegar infused with strawberries
  7. Sparking wine / Prosecco / Spumanti

For the balsamic:​

  1. 250gr Balsamic vinegar
  2. 2-4 Strawberries chopped


  1. 1x Shaker to stir the cocktails. Any container works well for this but stainless will hold the temperature better. If you do not have anything suitable try using a sports shaker or coffee flask
  2. 1x Spirit measure. Whilst these can be picked up almost anywhere now, including charity shops, there are suitable alternatives including an egg cup which holds approx. 50ml
  3. 1x Bar spoon for stirring or a suitable alternative utensil
  4. 1x Teaspoon


  1. Add the chopped strawberries to the balsamic and leave to rest for 24hrs, then strain
  2. Stir all with ice cubes and strain into a tumbler or rocks glass. Top with sparkling wine and garnish with a couple of slices of cucumber.
