We've got used to seeing squash and pumpkins in the shops, but if you're flummoxed as to how to prepare a butternut squash, here's the video

 

  1. Cut the squash in half.
  2. Trim off one end. Cut in half and then again to create four pieces.
  3. Cut the bulbous end in half and scoop out the seeds with a teaspoon.
  4. Peel the butternut squash (you can leave the skin on to roast). Cut into even sized pieces and place in an ovenproof dish. Brush with a little oil, season and roast at 200ºC, 180ºC fan, Gas 6 for approximately 30 -40 minutes.
