The most important part of any roast, some might say
1. Remove the turkey from the roasting tray and scoop out the excess fat
Leave one tbsp in the tray.
2. Put the roasting tin on the hob and stir in 25 g flour
3. After a couple of minutes, slowly add stock
Add roughly 700 ml turkey or chicken stock, ladle by ladle. Bring it to the boil then reduce to a simmer. Simmer until it thickens to your chosen consistency.
