Once a vegetable only deemed tasty enough when covered in cheese, the humble cauliflower is making a mighty comeback. Some clever cook has discovered it might just be the low carb alternative to mountains of bloat-inducing white rice, so we decided to have a go at making it …

Serves 2 (as side dish)


You'll need:

1 small head of cauliflower, washed and roughly chopped

A food processor 

A pan with a lid

tbsp olive oil

Salt and pepper to season

A handful of parsley, chopped

 

 

Step 1

Chuck your chopped cauliflower into the food processor.

Step 2

Pulse until the cauliflower is the roughly the consistency of rice.

Step 3 

Warm the olive oil in a saucepan, add the cauliflower and fry for about 7 minutes. Keep the lid on to steam the 'rice' and give it a stir every now and then. The cauliflower should be cooked through but keep some bite to it.

Step 4

Season with salt and pepper, stir through the parsley and serve with your favourite curry, stir-fry or chilli.
