Cauliflower is the beloved veggie of choice when it comes to health hipsters. But trends aside, it really is a wonderful veg you need to get into your diet. They're a super-delicious replacement for mash spuds, rice, pizza bases and even tortillas.

Are there different types?
Indeed there are. A member of the cabbage and broccoli family, the florets are the unopened flowers of the veggie (hence the name cauliflower, geddit?). There are four varieties: orange, green, purple and the chartreuse romanesco, which comes all the way from Italy (it’s got strange pointy florets and a deep nutty flavour – definitely one to look out for).
