It's official: mushroom season has begun. Before you dust off your tried and tested method of frying them up with salted butter and serving with eggs for brunch (not that we'd ever dream of stopping you, it's a delicious classic), have a go at these recipes instead.

 

Chestnut, porcini, flat, stuffed, baked and liquefied – these dishes explore the wonderfully tasty fungi world, pairing them with sweet nuts, mini meatballs and creamy spaghetti. Here are our top 7 autumnal favourites.


1. Mushroom stroganoff

This recipe is gluten-, dairy- and wheat-free, yet tastes indulgently rich and is ready in 20 minutes. Spoon over toast for a light dinner or serve with eggs for a tasty brunch twist.

2. Mini mushroom pizzas

Way healthier than actual pizza dough, these baked flat mushrooms are topped with smoky bacon, mozzarella, garlic and tomatoes. Great as a starter or party canapé.

Soft cheese and mushrooms are a match made in foodie heaven. Admittedly this isn't the healthiest dish featuring our fungi friends but it is incredibly tasty and totally worth it on a chilly autumn evening.

4. Mushroom and chestnut soup with truffle oil

The drizzle of truffle oil in this recipe will draw out the rich, nutty flavours of the porcini and flat mushrooms on a level that olive oil just can't achieve. A really hearty bowl of goodness – you'll never look at a tin of tomato soup again.

5. Mushroom risotto with meatballs

Autumn lends the perfect excuse to pack your meals with extra protein in the absence of sunlight. And, in our book, that means meatballs. These mini versions are so easy to make and even picky kids will love them.

It's a burger, but not as you know it. This veggie version is bread-free, plus it's got silken tofu, avocado, sweet potato and edamame beans. Who said vegetarian food was boring?
