Maple is the sweet stuff of the moment.
Dark, sticky and full of a rich, nearly fudgy flavour, it's the go-to of the wellness world for drizzling on porridge, baking into cakes and subbing out for sugar in treacle marinades.
A new book, Maple: 100 Sweet and Savoury Recipes Featuring Pure Maple Syrup by Katie Webster (Hardcover, RRP £16, Quirk Books), deals exclusively in recipes using the natural ingredient. The syrup is also a hero product in The Art of Eating Well (Hardcover, RRP £25, Ebury Publishing) from sisters Jasmine and Melissa Hemsley, who use it to add that little something to creations like their avocado cheesecake.
It's also pretty versatile. "As well as using it as a topper for porridge and cakes, trying drizzling over chicken or salmon as part of a marinade," says Bob Clark of Clarks Maple Syrup.
