Despite it looking like a real skill, stuffing is super-easy to make from scratch. It can include meat (such as sausage, liver or pancetta) or be entirely vegetarian (with lots of herbs and fruit).
What do I need?
The base ingredients you’ll need to make stuffing are breadcrumbs, seasoning, butter and egg. Then you need to think about flavours. There are no hard-and-fast rules, but some classic flavour pairings are chicken with sage and onion; pork with apricot, prunes or apple; lamb with mint; and beef with mushroom. Stuffing can also be used for vegetarian dishes, such as in roasted peppers or tomatoes – or other vegetables, like a hollowed-out squash or courgettes with a channel cut into the centre.
Then what do I do?
Egg, water or stock can be added to a breadcrumb-based stuffing to help it bind together. To avoid it getting too wet, add a little at a time and leave it to absorb for a few minutes before adding more. You want the mixture to be moist, but not wet.
Does it keep?
When you’ve prepared your homemade stuffing, you need to either cook it or freeze it straightaway. Cooked stuffing will keep in the fridge for up to three days. Frozen, uncooked stuffing needs time to defrost thoroughly before you cook it.
